Lao Laap is a delicious beef salad mixed with fresh herbs and lime. It’s also the National dish of Laos!

Scallop Ceviche on a bed of hijiki salad with sea grapes.
Hijiki is super easy to make and pairs so amazingly with scallop ceviche.
Don’t boil crabs next time, stir fry them. One of my favorite Vietnamese ways to eat crab especially Dungeness crabs is stir fried with a savory, slightly sweet and peppery oyster sauce!

Crispy roasted pork belly is one of the most coveted Vietnamese dishes and it was definitely one of my dad's favorite dishes that he was very proud of. It's not an easy dish to make, it's actually one of the trickiest and most finicky dishes where anything can go wrong. 9/10 times it would turn out to his liking but he would be so nervous and anxious during the whole cooking time. I still have memories of my dad sitting in his white apron and boxers in front of the oven waiting like a hawk over it's prey.

Uni, which is pronounced "oo-nee" in Japanese, are edible sea urchins that are rich in umami. It's a unique flavor that is absolutely amazing; it's slightly salty and sweet. Fresh sea urchin, butter, pasta water, parmesan, and a little saki creates a decadent orange sauce that is tossed with hot pasta noodles.
This is one of my favorite comfort foods, slow-braised Vietnamese pork belly. It's also a staple dish during Lunar New Year and symbolizes love and family affection. It's savory, sweet and melt in your mouth tender. mmm

I made this Thai -style omelet from the book. It's super soft with fluffy layers of scrambled-like eggs . It has nice crispy golden edges and packs in some umami yumminess from the little hit of fish sauce that was beaten into the eggs .

You’ll want to eat these whole! These are a favorite in our household especially when we eat out at a nice Vietnamese restaurant. The shrimps are super crispy with the use of cornstarch and when deep fried, they are so crispy that you can eat them shell and head on!
My mom's Vietnamese Braised Salmon aka "Cá Kho" recipe is so easy and oh so tasty!You'll see this normally served in Vietnamese restaurants in a simmering claypot but you can make this straight on your stovetop with a pan or stove-proof pot.
Typically you caramelize sugar first, but if that step scares you then you'll like this shortcut of marinating the fish in sugar and fish sauce and letting the fish caramelize with the marinade slowly in your pot. Click to learn more and for recipe!
