Easy lobster rolls using lobster tails in the air fryer!

These Connecticut lobster rolls are simply served with just freshly drawn hot butter! MMMmmm.

Just butterfly your  lobster tails, pop them in the fryer, chop it up, toss with butter, and stuff it in some warm buttered buns.  Then  drizzle drizzle some of that liquid gold on, aka hot butter .  Pinch of parsley and a squeeze of lemon, optional.

Using an air fryer also makes cooking these lobster tails super easy but you can also boil or steam them for a more traditional take on the lobster roll.

PS- I used my new Nuwave Todd English Pro-Smart Grill to make these but you can use any air fryer (temperature and time may need to be slightly tweaked for your air fryer).

INGREDIENTS

2 Lobster Tails (I got frozen from Wulfsfish)
1/2-1 stick unsalted melted butter
Top-split hot dog buns (Pepperidge Farm brand is great)
Lemon (juice to taste)

Optional garnishes: Chopped parsley

PREPARATION
1. Defrost lobster tails by keeping in package or bag and placing in cold water until unthawed (or place frozen tails in fridge overnight in fridge to defrost).

2. Butterfly lobster tails using kitchen shears by slicing through the top center of the hard hard lobster (be careful to just cut the top shell, not the meat or bottom shell). Break open the shells and open the lobster shell but don’t completely separate in half.

3. Pull the meat from the shell and carefully place it on top of the lobster shell. Discard any lobster veins or the “poop shoot”.

4. Melt butter in microwave for a few seconds until melted through.

3. Place lobsters on foil lined tray and brush over some butter and season the lobster with a little salt and pepper.

5. Brush some melted butter over the lobster tail meat.

6. Pre-heat air fry to 375F and then air fry lobster tails at 375°F for about 10 minutes.  After about 5 minutes, baste lobster with more butter until the meat is no longer
transparent, a little golden and cooked through.

4. Remove lobster tails from air fryer, let cool for a couple minutes. Chop meat and toss with some more butter and a little lemon juice. Season with salt and pepper to taste.

5. Heat a little butter in a pan. Toast inside and outside of buns with a little butter. Garnish with a little chive and parsely if needed.

Serve hot with a side of potato chips.
