Pickled Bean Sprouts- “Dua Gia”

Dua Gia is a classic Vietnamese pickled beansprouts and a beloved staple in any Vietnamese household. It’s a light and colorful pickle great to pair with salty meat and fish dishes. In Vietnam, it’s usually seen and served as a companion of roasted pork!

Super easy to make, maybe 20-30 min tops from start to finish.

INGREDIENTS

  • 1/2 cup sugar

  • 3 teaspoons salt 

  • 3/4  cup white vinegar 

  • 3 cup water

  • 1 lb bean sprouts, rinsed under cool water

  • 1 cup carrot, peeled and shredded

  • 1 thai red chili pepper (cut in thin slices, remove some seeds to reduce heat)

  • 3 garlic cloves (smashed)

  • 4 Bunches scallions cut in 2" diagonal slices
    * small bunch chives or green onions, cut on the diagonal into small pieces

PREPARATION

1. Combine bean sprouts and scallions in large bowl 

2. In medium sauce pan combine water, sugar, salt, and vinegar over medium heat. Stir to dissolve the salt and sugar and bring just to a boil. Remove from heat and let cool completely.

3. Add chili pepper and stir.

4. Combine the bean sprouts, carrot and chives or green onion in a large bowl. Pour the brine over the vegetables. Toss and let sit for at least 1/2 hour, tossing occasionally 2 -3 times during the 30 min.

5. The vegetables will shrink in volume, allowing the brine to cover all of the vegetables.

Serve immediately or cover and refrigerate. To serve use tongs or a slotted spoon to scoop up the bean sprouts from the brine. Will keep for several days in the refrigerator.
