🎃 Fresh Pumpkin Pasta with Miso Honey Butter Sauce

It’s officially pumpkin season, and if you’ve been here a while, you already know — this is my favorite time of year to cook. Everywhere you look, there’s pumpkin bread, pumpkin spice, pumpkin everything… but my absolute favorite way to use it? Pumpkin pasta.

There’s just something magical about turning simple ingredients into something so silky, savory, and satisfying. The dough comes together with just three things — pumpkin, flour, and a pinch of salt. This dish has become one of my go-to recipes every year when the weather cools down.

🍂 Why Pumpkin Pasta Is a Fall Essential

Pumpkin pasta has this perfect balance — hearty but not heavy, rich but still bright. You can make it with fresh pumpkin puree (which I’ll show you below), or take the easier route with canned pumpkin. Either way, it comes out golden, smooth, and unbelievably good when tossed in my miso honey butter sauce — a simple blend of sweet, salty, and umami that clings to every noodle.

It’s one of those recipes that looks fancy but feels effortless — and it all comes together in under 30 minutes.

🎃 Homemade Pumpkin Purée (Optional but Worth It)

If you want to make your own, here’s my go-to method using butternut squash, which is naturally sweet and silky:

Ingredients:

  • 2–3 cups cubed butternut squash

  • 1 tsp neutral oil

  • Pinch of salt

Directions:
1️⃣ Toss squash cubes with oil and a pinch of salt.
2️⃣ Air fry or roast at 400°F (200°C) until tender and golden (about 20 minutes).
3️⃣ Blend with a splash of water until smooth and creamy.


🍝 Fresh Pumpkin Pasta Recipe

Serves: 3
Prep Time: 20 minutes
Cook Time: 10 minutes

Dough Ingredients

  • 1 cup (250 g) pumpkin purée — fresh or canned

  • 1 ½ cups (225 g) all-purpose flour

  • Pinch of salt

To Make the Pasta Dough:

1️⃣ If using fresh pumpkin, follow the steps below to make your puree. If using canned, measure out 1 cup.
2️⃣ In a large mixing bowl, combine the pumpkin purée, flour, and a pinch of salt. Mix until a dough forms.
3️⃣ Knead the dough for 5–7 minutes until smooth and elastic.
4️⃣ Bring a large pot of salted water to a boil.
5️⃣ Using kitchen scissors, cut small pieces of dough directly into the boiling water — like rustic dumpling-style pasta.
6️⃣ Cook for about 3 minutes, or until the pasta floats and is tender.

🥣 Miso Honey Butter Sauce

This is the sauce that ties it all together — rich, buttery, and balanced with just the right amount of sweetness and umami. I used the below proportions for about 1/2 of the pasta dough, 1 plate of pasta. Double it or more to use the entire pasta dough.

Ingredients:

  • 1 tbsp miso paste

  • 1 tbsp honey

  • 2 tbsp butter

Directions:

1️⃣ In a pan over medium heat, melt the butter.
2️⃣ Add the miso paste and honey, stirring until smooth and aromatic.
3️⃣ Stir until everything becomes glossy and combined.
4️⃣ Toss in your freshly cooked pasta and coat well in the sauce.
