Blanched Bean Sprouts and Leeks- Recipe

This cold bean sprout dish is perfect for the summer time!

A simple blanch and quick garlic stir fry makes this dish complete in less than 10 minutes! ❤️

INGREDIENTS:
One handful chinese leek or long chopped scallions
2 cups bean sprouts
1 tbs sesame oil
1 tbs chopped garlic (about 2-3 cloves)
1 small knob of ginger minced

1 chili pepper chopped
1/4 tsp Gochujang paste
3/4 tsp salt
1/2 tsp sugar
1 tsp soy sauce

PREPARATION:
1. Wash the bean sprouts and leeks. Trim bean sprout ends and chop leeks in long 2-3" pieces.
2. Boil pot of water, about 8 cups. Blanch bean sprouts and leeks for about 5 seconds
3. Put bean sprouts and leeks in ice bath, then drain in colander.
4. Add 1 tbs sesame oil to pan and chopped garlic & ginger and let cook til fragrant and remove from heat
5. Add chili paste, salt, sugar, soy sauce into pan and stir with no heat.
6. Add red pepper and mix, then pour sauce mixture over bean sprouts and leeks in a bowl.
7. Eat cold. Garnish with some fresh sesame seeds and store in fridge til ready to eat!
