Banh Cuon Chay- Vietnamese Vegetarian Stuffed Noodles with Crumbled Tofu

Have you ever had vegetarian Banh Cuon (aka Vietnamese sheet rice noodles)? It’s basically like a Vietnamese Dim Sum rice roll. I haven’t seen many recipes that are vegetarian and I wanted to share this family recipe.

The secret to perfectly fluffy Banh Cuon is in the rice flour mixture, it creates perfectly smooth and transparent rice sheets and this is our family’s secret recipe. No more need to buy the pre-mixed flour if you want to make it from scratch!

Typically Banh Cuon is made with pork but my family has a vegetarian recipe that uses tofu crumbles to take on that "ground pork" texture and filling.

Tastes just like the real deal. These "Banh Cuon" aka Vietnamese sheet rice noodles are steamed or fried on a pan, then rolled finely with crumbled tofu and mushrooms.

FLOUR BATTER FROM SCRATCH

1/2 cup corn starch

1/2 cup tapioca starch

1/2 cup rice flour

1/2 tsp salt

2 tbs canola oil

3 cups water

PREPARATION

  1. In a bowl- stir together all dry ingredients and mix well.

  2. Pour in the oil and water, and whisk together until you get a nice thin and smooth batter.

  3. Let rest for 45 min, then re-mix and use
